It’s the start to another great week! It’s finally starting to get warmer in the midwest and I’m looking forward to the warmer weather. It’s going to rain most of the week but I’ll take it – spring showers bring May flowers 🙂 Since the weekend is over, I’m sharing a weekend recap. My husband was out of town so we spent a nice low key weekend at home – my favorite kind 🙂
After a long day at work with multiple complex patients, I was looking forward to a nice and relaxing evening. I picked up my daughter from her babysitter and we cruised home. By the time we got in the door, we were both starving. I threw together dinner quickly for both of us – leftover pizza for her and a leftover greek quinoa salad for me. We read a few books, watched a little bit of The Lion King and soon it was time for bath time, cuddles and pajamas. Once she was tucked in bed, I had high aspirations of catching up on some of my favorite mindless tv, but I was too exhausted to make it happen and found myself with the lights off before 10 pm!
Apparently, I wasn’t the only sleepy one in the house on Saturday because my daughter slept in until almost 9 am! Totally unheard of and lucky for me, I took advantage and slept until 8:30 am, which gave me just enough time to get my grocery list in order before she was up. Soon, we were both up and made our way to the kitchen. A bag of potatoes was out on the counter and so we started the morning by making potato pancakes – one of my childhood favorites. They were a hit as usual, but not quite as good as my moms!
Soon, breakfast was over and it was time for everyone’s favorite morning activity – coloring. I’ve been saving all of our broken crayons in a bag to re-purpose them, as I’ve noticed that one good throw from the high chair sends them cracking in half. After coloring was over there was a lot of running around and playing in the house until it was almost time for lunch.
My daughter pulled out her play dough and wanted to play, but it looked like it had hit it’s expiration date. A week ago it was left out without the lid overnight, meaning it dried out and was time for a new batch. I threw together the ingredients and we had new play dough in about 15 minutes. We picked out the colors together and worked the dye into the dough. I gave her some plastic cookie cutters and she had a blast.
Then, it was time for nap time and while I thought I was going to end up accomplishing a lot, a short nap left me feeling less than productive. We ate a quick snack before heading to the grocery store to pick up our groceries for the week. We came home, unloaded and I made a quick dinner for my littlest love of grilled cheese, avocado and raspberries. Soon, she was bathed and all tucked in bed. I whipped up a quick grilled cheese and bowl of tomato soup for myself before settling into bed and binge watching about 3 episodes of Fuller House – laugh all you want but it’s totally my guilty pleasure show!
The day started off bright and early when I found myself awake at 7 am. Shortly after, my little one was awake and so we started our morning cuddling and listening to nursery rhymes. Soon, I was met with a chorus of “eat, eat,” so we made our way down into the kitchen for breakfast. As I sat her in her high chair for her breakfast of cereal, milk and a banana, I noticed a gigantic bird flying around outside the window. My friend’s dad is a bird expert and we quickly discovered that it was a sparrow hawk!
While watching the antics of this crazy bird, I gathered all of the ingredients for protein breakfast cookies. I’ve been making them forever and love the simple ingredients – oats, applesauce, eggs, peanut butter, almond butter, protein powder – and usually make a double batch for quick breakfasts throughout the week. I threw the ingredients in my stand mixer while my little lady continued to eat her breakfast and popped on baby einstein radio so we could have some jams.
The cookies with out of the oven and ready to cool and it was time for me to get ready for brunch. Once I was showered and dressed, we hit the road to meet three of my girlfriends. There was lots of catching up, good food and another plan for brunch a few weeks into the future at a farm to table type restaurant downtown – I can’t wait!
My little one fell asleep on the way home and I transferred her to the crib. I never know how long afternoon naps are going to last, so I hit the basement for a 40 minute barre workout. She was still sleeping when I was finished, so I used the extra long nap time to get some laundry done and work on cleaning the kitchen. There’s nothing quite like a good and productive nap time.
Soon, she was up and shortly after that my husband came home! He bought her the cutest little trapper hat and she was running around the house in it laughing. Adorable. We were too tired to cook so we ordered dinner and caught up on the events of the weekend. Soon, it was time for pajamas and relaxing with a cup of tea after our little lady was tucked into bed. That wraps up another great weekend!
